     More than just a cookbook, Specialties of the Haus is a unique blend of American and Eastern European foods, customs, and cultures. It captures the very breath and essence of Haus Edelweiss, TCM International's European campus near Vienna, Austria. Here seminary training is offered to church leaders, preachers, and teachers from Central and Eastern Europe, training that was denied them during the long dark years of communist rule. Here bodies and spirits are nourished, and eager minds are fed.

     Picturesque Bavarian-style buildings—some more than 100 years old—nestled against the forested hillsides of the Vienna Woods create a storybook setting where an air of peace and serenity blesses the property like a benediction. In an atmosphere of warm hospitality and rich fellowship, an abundance of love, laughter, caring, and kindness is served up daily along with the platters and bowls of delicious food. To the men and women who come here, Haus Edelweiss is "a taste of Paradise on earth."

     The pages of Specialties of the Haus are filled with nearly 200 recipes for hearty, flavorful, uncomplicated foods to delight your family and guests, even the crowd at your church supper. Page after page is enhanced with beautiful original sketches and watercolor drawings reflecting the personality of the Haus. Many more watercolors illustrate the countries and customs of the people who come here.

     Much more than a cookbook, this is a keepsake to treasure.


Potato Chip Cookies

 

1 ½ cups sugar

 

1 ½ cups light brown sugar, packed

 

1 ½ cups shortening

 

3 eggs

 

1 ½ teaspoons vanilla

 

3 ½ cups flour

 

¾ teaspoon salt

 

2 ¼ teaspoons baking soda

 

1 ½ cups crushed potato chips

     Thoroughly cream the sugar, brown sugar and shortening until fluffy. Add eggs and vanilla and beat well. In a separate bowl, stir together the flour, salt and baking soda. Gradually stir into creamed mixture until completely blended. Blend in potato chips. CHILL DOUGH 1 hour.

     Shape into 1-inch balls (or use a level #40 scoop). Place 3 inches apart on ungreased (or parchment paper-lined) baking sheets. Don't crowd--they spread! Bake at 375° F for 12 to 15 minutes, or until a rich golden brown. Cool on racks. Makes about 4 dozen.

     Cook’s note: Although the "Cookies" section is the largest one in my personal recipe box, I had never heard of Potato Chip Cookies until my first visit to Haus Edelweiss. Former cook Lois Powney says she made these using the crumbs in the bottom of the potato chip bag when her children were growing up. Crisp and chewy, they have become a tradition at the Haus.


     This very special blend of history, good food, and delightful artwork has been two years in the making. Its purpose is to provide scholarship funds for the growing numbers of students entering TCM.

     All profits from the sale of Specialties of the Haus will be used to fund scholarships for TCM International Institute students from Europe and Central Asia.
